It depends on where you live, the type of wind usually, what boards you're using and weight. Someone could ride an 11m Switchblade as their biggest kite with a race board while others go and pump up their 11m when the wind picks after using their 14m.

You'd probably be fine with an 8m as already said. It doesn't hurt to have a 6m in your quiver though and some use their baby kites in the winter on the frozen lakes. If you're rarely going to use it, I wouldn't buy one brand new unless you find a sale or deal. Since small kites like that may not ge...

Lessons aren't just for yourself and your safety, it's also for the safety of other kiteboarders and the general public enjoying the beach or shoreline where you are practicing.
