Here is a guy windsurf foiling in 50knots. Why the hell would you want to foil in 50knts? Why not? I've been out in winds gusting up to 40 knots on my 4m and it was completely manageable!. Here is a guy windsurf foiling in 50knots. Why the hell would you want to foil in 50knts? Speed? Pretty sure some of the top foil race guys don't touch winds like that on a foil, you'd probably need a 2m kite. 22-24 is what the majority of people and riding gets done on. Extensions are painless and handy to have for sure.

Just to update this.

I ended up going with Chinook fin boxes so I had the option to slam my mast all the way forward or backwards. Also they are way beefier than a standard surfing Bahne/ Singlefin box.

Also got the brass nuts just to make sure it was solid.

So I use North Dice or a Juice when I'm riding my foil, because I also strapless surf and do wakestyle with them. Side question, is the mast to fuselage connection a pre existing standard like a probox (kind looks like a short probox) or is it a custom (non standard) conical connection?
