Area matters and there is a big difference between 12M and 15M. IMO, a 15M Flysurfer Soul, Speed, or Hyperlink would be a good start.

The vendor guides are very general and change based on your weight, board, and riding style. As everyone else has been saying, a 2-3M difference in kite sizes from 12M down works well - 12/9/7 worked very well for me and I recently added a 5M but could just as easily consolidate the 5M/7M to a 6M. My minimum is around 7kts and its a struggle with a 18M foil kite to get a water start. It will likely take me two loops - The first to get up and the second to get on foil. Smaller board is a liability - You need some volume under you as you get upright. Its hard work and worst case I am swimming ...

Ram airs have no business being on the water LEI's sit too far back in the wind window to be effective hydrofoiling, so if you want to go fast, far, on light wind days, foil kites win. No LEI's flying in that video and water surface showed minimal wind. I do agree with the many of the stupid claims...

Before I started tacking, I practiced moving my rear foot into and out of the rear strap. This made it easier to put my rear foot into the strap after tacks/gybes.

So a small kite with Massine range to cope with lulls and gusts and the wipeouts(slack line syndrome) that high waves add into the mix would be good for me.
