This thread is amazing, "Horst Sergio" really has it figured out and he does a great job of explaining it.

He explains his kite packing. I have had good success when standing in the water, more difficult if just floating in the water.

I found that it was a lot easier for me to learn to hydrofoil with a large kite in light winds. 6 knots might be a little tough for a beginner but I found that 8-9 knots and a big 21m Speed 5 was my sweet spot. Here is a video that shows folding the kite and placing sand on the fold. You can fold the kite even further from the tip so that it is even more securely held down for higher winds.
