Would like to get recommendation where should I go at the end of July? Dahab Or Nabq in Sinai or to fly to El Gouna. I am a beginner and my son will take a course. El Gouna seems a little better but for me it will be more expensive due to the flight where, to travel to Sinai I can go overland from Israel.
The main issue for me is the wind condition and the water surface, I prefer flat etc.

Cant speak for the other spots but elgouna has everything you need, flat water consistent wind, many great schools offering lessons for your son, and a fantastic chilled out vibe

El Gouna is a great place, also has some nightlife and things going on.
But don't know Dahab...might be similar?

That's Hurghada...El Gouna much safer.
BTW, then don't go to Berlin, Nizza, New York....just enjoy live. It can get you anywhere anytime, with whatever.

Right, but believe me, you're preaching to the converted...(started Hfoiling at 65
)
I'm not recommending abstaining from riding in the Red sea.
I would state your BTW a bit different: Manage your risks (e.g. as per your recommendation, better El Gouna than Hourgada -
though I don't have info to confirm the statement)

I just did my first course in Dahab last week. It was great. It has a shallow water lagoon and the wind conditions were perfect. That being said.. El Gounahas better kite centers and instructors.

There isn't a lot of night life in Dahab besides sitting in cafes along the beach or taking a desert trip. There is one dance club, but I didn't check it out.

If coming overland I would just go to Dahab or Ras Sudr.
Dahab has a nice lagoon and is a good spot to learn, I learned there back in 2004.
Ras Sudr wasn't windy when I was there so I'm not sure what the water is like but I didn't care much for the spot off the water. Basically the middle of no where with nothing to do if it's not windy. Looks like they have build some nice resorts there now though so it might be worth a look.
Dahab is split in to two parts, fancy resorts and the actual town. You kite right in front of the fancy resorts and it's a 5 min drive to the town. Town has some restaurants but not much night life (at least back in 2004). One hour drive away you have Sharm El-Shiekh, which is packed with nightlife (almost exclusively run by Russians).
If it's not windy you have amazing scubadiving options in both Dahab and Sharm as well as a hike up Mount Sinai.
