Kite-Hydrofoil Miami also carries Peter Lynn. You can set up a back to back demo.

Thats a 7m. Looks huge and slow for such a high aspect 7. What's up with the shape of all foil kites? They all are super high aspect yet appear very slow. Do they measure foil kites differently or something?

Flat size is just 7m^2 and projected around 5.9m^2 where most 7m tubekites are in the 4-4.5m^2 range projected with a lot less span due to their low(er) AR.
That is why high-AR foilkites turn so slowly, have less high-end and more low-end compared to the same size allround (tube)kites, a 7m Aero feels more like a 10m tube with the straight-line speed of a 5-6m. They just use their surface area much more efficient, give you more top speed, better upwind angles and more heigth + hangtime. High-end on a TT would be 33kn with gusts of max 40kn for my humble 70kg.
But this topic was about medium AR foilkites, not racekites like the Aero/Sonic/R1/Diablo etc
