Sessions app. If you do not want to use that excellent third party app, the activity logging options in the Workouts app will do the trick too.

sorry I appreciate you trying to help Sun but the info shared is to cryptic. all I'm trying to do is decide what workout is the best one to use for kitesurfing

Many apps out there. Strava and Waterspeed are the ones I use the most. I used to use Xensr Sessions, but not anymore after finding out how inaccurate it is. Built in activity tracker is very basic, does not even have the maximum speed reading...
North PIQ app, even without the PIQ can be used to track your session via the watch gps.

From the App store on the iPhone, search for the Xensr Sessions App. It plots a map of your session, displays it on a satellite image, tracks time, speed, and distance. Jump tracking works well, but is about 50% less height than what a Woo reads. One of the nicest things about it is that it counts as a workout in the Apple Ecosystem, meaning it contributes to the goals in the Activity App. Unless there is something very specific you want to track, it is probably the best kite specific app for the watch at the moment.
If you want to use the built in Apple Workout App, they all are about the same. I do a lot of actual outdoor runs and walks, so I would not use one of those to track kite sessions. The stats appear to be the same for most apps, so I would use Outdoor Cycle or Open Water Swim if I did track my sessions with the Apple Workout app.

Hi, it's unclear how you would do that. I have an Apple Watch 4 and a Piq.
I would have to look at the PIQ app on my iPhone after a session?

I've used the Sessions app for my Apple Watch 3 + Cellular, it is very inconsistent at it's very best, and does not work in most cases. By not working in most cases, I mean it does not track where I went on a GPS map, does not log my jumps, and states that my sessions are 1-5 minutes long when I come back after riding for 60 minutes. I've reached out to their support team for help, but the app doesn't work so frequently that I've stopped reaching out all together.
I originally bought the Apple Watch 3 specifically to track my kiteboarding sessions, but was SUPER disappointed to learn that the native activity app doesn't have any thing to track my speed and map tracking. To other's point on this thread, there are apps like Strava that can serve that purpose, but I was even disappointed with Strava's app when I tried it since it is geared toward bicyclist.
Overall, I would be careful in picking an Apple Watch (or as you say iWatch, that's not the product name fyi) for your kiteboarding stats. I think at this point the Woo is still your best option, though admittedly I've never owned one. Attached photo is an example output from the Sessions app after I had been riding for 60 minutes. Notice the number "4" indicating my 4th jump. Where are the rest of my jumps? App is a piece of s*, but it's free, so you get what you pay for.

That is not my experience at all. Other than (known) jump heights being completely unreliable, all other features of the session app has worked flawlessly for me. FYI - Apple Watch Series 3 w/o cellular. I have no affiliation with Xensr in any way.

Once you install the PIQ app on your phone, it's watch app will be installed on your watch, and you can launch it from the watch without your phone. You'll be able to see your speed, jumps etc in real time, and later on on your phone PIQ app too.
