Is it possible to foil in the Laguna Madre (from north or south flats) on a short mast (60 cm)? How shallow is it? I am still learning to foil and can water start and do short rides both ways flat on the board.

Short Answer is Yes, but you will have to walk out a little further to get to waist plus deep water.
Stop into AirPadre and they can show you the spots to stay away from

Heard of alligators basking out there south of south flats. Did anyone ever hit any of those with a foil?

definitely can foil the sound there but you will want the short mast. Can easily foil the oceanside and the waves actually get decent when it blows >20knots. I have done many downwinders there, it's an awesome place

The shallow part depends on the tide. 1 to 2 ft but once you get out its about 4-6 foot. The whole center of the bay is pretty much 6 ft. There is a lot of sea weed in the bay however so that might be a problem anywhere it is growing up more. Most of it is pretty much on the seabed from my experience. I have never foiled there most of the times I go there it is windy and if not I just play around on my skimboard.
