I've completed an improved version of my trim toggle with stainless steel hardware.
Now I just need some wind..

One way to get rid of the ball, would be to make a metal piece like the one you show, but make the holes "keyhole" shape, so that as you rotate the metal piece, the rope gets jammed into a narrow slot. The metal piece would be made about an inch wider, with a rubberized coating on the outside 3/4 inch, for a grip surface. One hand would grab the piece and rotate it up or down to grip the rope.
