Which spots on Mauritius (beside le Morne) will work for hydrofoiling?

pointe d'esny is the best it works for all tides
le morne is a bit shallow at low tide

Thanks. I will keep an eye on the forecast for ponte d ensny. It seams to work best in SE direction?

It works in all directions from NE to SE
Actually if it is NE it is the only place that works well, the wind increase a little bit at the end of the morning.
If you have SE wind: you can stay at le morne, it is always more windy than the forecast and always windy
even if the forecast is 5 knots, it is due to le morne mountain and some thermal effect.
In le morne if you stay in the lagoon watch out at low tide , it can be shallow at some place.

If it is north or NE, you can also stay at le morne and ride on the other side of le morne, the wind is accelerating too
