I learned on the Moses Fluente. I've not foiled on anything else. It took 3 sessions to learn to get up on it. 4th to stay upwind, 5th I was flying. Now at about 50 hours and doing carves and toeside, about 50% success rate in choppy conditions. I'm 80kgs.
I've used 4 boards, a moses T40. I could not use it, way too big for me. Tried 3 sessions. Then a converted stubby 4-10x18" surfboard session 4-30, then a custom ( I made it) 4-6 X18" session 30-32, it broke, then a Slingshot Dwarfcraft 5-4 for session 33-45 then I fixed my custom that gained 1,8kgs weight.
My experience is the boards radically changed the foils behavior on and off the water.
The custom that changed weight has huge influence on foil behavior. It's much less agile, but more stable in the air. Less twitchy.
The Dwarfcraft is super agile, but cannot take touchdown or surface riding without nose dive. This is likely due to moses foil behaves very different than Slingshot foil, which board is designed for.
