I used a wooden mounting plate like that when I was messing with a windsurfing sail on ice. Bolting metal to metal tended to get unscrewed and shaken apart no matter what I did with thread locker. Wood seemed to hold nuts and bolts more securely, maybe because it dampened some of the vibration.

Paint over the nuts that locks them down. I've been using iceboards for about 5 years, bolts and nuts also shake out of the wood mount maybe it takes one more day, than the metal? Anyway, the only way to stop it is lock the nuts in place, wood or metal doesn't matter. Lock tight also works, but make sure you use enough. Once you have locked them they will stay in place for years no matter how rough the surface. If you don't get enough loctight in there it will wiggle loose. Hope you are ready to get back into it, it's fun.
