The rodeo/cowboy start is my go to. I learned it when I started riding boards 30-45L, but still do it now that I am back to riding more neutral sizes (e.g. 70L). It's just the fastest, most controlled way for me to get going.

If you have decent wind at your spot, i don't see why you can't make it work with the right equipment.

I tried to do 4/6 but didn't like it! (I now have just ended up with 3, 4, 5, 6!). In any case if I were to do 2 wings, I would drop the smallest one, and choose something like Wasp v3 or FOne Strike that have 0.6m or 0.7m spacing so the difference isn't so extreme.
