In under 15 knots, sure downwind is fine but you will cover some distance. Side launch is the safest way when it's windier.

One layer of 650g/m2 carbon is plenty tough. I literally about to laminate my board and was going to use 2 layers of 650g/m2 carbon for the bottom of my board. I weighed it up for epoxy measuring and it's heavy. Are you sure I can get away with just one layer? I will have a second layer only around...

wow, I am 115kg and am by far the heaviest rider in my area.

I get weird readings from Woo depending on the kite I ride. I get what feel like more accurate readings on my foil kites compared to my tube kites.

Going over 14m at that weight! Man that kit must be screaming! great job though.
