Certainly you can use your existing mast/fuselage/stabilizer and a better suited from wing for winging. Not only you can use Sabfoil wings, but you can also use Phantasm wings if you drill the holes to 8mm.
What wing size are you considering?

If bolts are seized to the aluminum mast plate - drill them out.
The tracks are plastic, so you should be able to remove the bolts from the tracks.

Let's really think about marketing here. … Why on earth would they abandon riders that usually only get 12ish knots? If Aluula was around for Best Hellfish, our new kites would had been obsolete years ago.
No offense to Cuben Fibre chosen for the Hellfish, yet for Cuba embargo reasons it would have been illegal in the US right off the bat and that killed the kiting revolution then.
