You should be fine I flew my 7m Boxer and even the 5m on a 50cm bar no issues just a bit faster but still fine even for foiling in high wind!

For me 15 knots is perfect for my 9M Boxer it's sweet from 8 knots to 20 knots and I can go to 25knots in a pinch. The 7M Boxer work from about 10 knots to 25knots and can hold in 30knots.

I have been foiling for 4 years with the Prolimit Kiteseat Pro I'm very happy it's ligth and comfortable. I use the Mystic Stealth bar rope version with it and it fits perfectly it has the pockets for the winglets of the bar.

That's not a good idea you will decrease the amount of depower the kite was designed for and make the kite less manageable. Since you will have to play with the depower cleat a lot more. I modified my WFMG pump to use the old black hoses from the small pump era it fits with those hoses and they never break like the new soft hoses.
