Actually Peter if you look closely at the Robby Naish video or the Bernd Roediger video on page 3 of this thread you will see no whitecaps and quite light wind.

OK, the wing looks good. But what else does one need. - How big a hydrofoil wing do you need? Would a 1200 cm wing be enough? - How small a board can you use? It looks like Naish will be first to the market with a production wing product. Good for them. :D I'd buy one if I could use it with my normal sized board and hydrofoil (700 sq cm wing) in winds of 20 knots. But if I need a big SUP board, a big wing hydrofoil and stronger winds... I'm not so sure......

With a properly trimmed board is there basically equal foot pressure? Yes. When you are riding properly your legs shouldn't get sore.. it's mainly your core (stomach) that gets a work out. Don't hesitate to move your feet out of your straps or hooks to a more comfortable position. I ride with strap...

Most of us are quite happy gybing with normal size wings (but perhaps a bigger wing is more comfortable for those who prefer to do things slowly)..
