Utter bullshit, we the non pro kite boarder spaff more pollution through our daily commute and mere existence into the atmosphere than every Pro kite boarder put together. Let's assume a top ten kiteboarding athlete would offset carbon from flights. Did anybody try to come up with a rough cost estimate per year?
You can find figures about dollars per ton of carbon but I have no idea how many miles these folks fly.

I looked up the wind history for the "South Padre Island" sensor for November on iKitesurf (I have a subscription) and one of the main wind directions is NNW which means it's slightly offshore, see image below. I don't think I would kite on the ocean side on those days, definitely not alone. iKitesu...

Most likely you can't sheet out enough in gusty conditions. Racers use bars with a very long depower throw (something like 70-80cm) and a super short quick release system to take advantage of the long throw.
