You can peel them up from about 45 degrees much like most other kites.

Get the 4 My favorite one of the bunch. Ideal for the really fantastic wave foiling range of 15-20 knots. On short lines its great up into the low 20's. Has a lot more range than the 5m and if you start getting overpowered on it you know your really into your foiling and will likely get a 3 as well....

I ride the Lift 170 mounted with the rear bolts 6" from the tail.

Echoing what's been said, I find temp to be a major influence. If I'm a bit dehydrated or fasted or tired, I'm usually alright as long as I stay warm. Just wanted to add that I think little airs are a killer aspect to this style of riding and add a great element to otherwise bland conditions.

learning to break out the foil in any and all ways is a blast.

Exactly, to elaborate a bit, pure rotation is spinning around the vertical axis, where in a roll the axis is off vertical with a component around the horizontal axis.

Well, most wingers are on boards 10-20x the volume of the kiter's board with all the swing weight that entails. Argument eh. Aren't you a speed guy? I bet there are foils that suit that kinda thing and people that like to discuss if there actually needs to be a vert component to wings and stabs, or the nuance of low drag component joining and the optimum fuse material.
