If you kite is the T3, yes you can on 1:1 configuration, other than that, you could use any other bar that has 2:1.

I have done that and actually some of the new bars comes with smaller loops.
Just unscrew the 3 screws at the side(make sure you do not change they order when you get them back in) 1 has a smaller lenght, cut the desire lenght and burn the end, re-atached and ready to go.

You have the perfect set up; The 12 will be the one you'll use the most, it has a broad range.
The 8 will go when you basically can't hold the 12 fully depowered, I'm 7 kilos more than you, and the 12 is comfortable in a lot of wind.
There is a 10 but you know allready the norm is overlap one size.

Go for the T3, user friendly, very forgiving and EASY to relaunch.

Fuels 09 are just excellent as they come this side of the planet.

With that many kites, you can be ok here in Cozumel.

If you're ready for crowds, The DR for sure blows in June.

An update:

4 have been caught here in Cozumel.

There is a warning on divers to keep alert and notifie their sightings to capture them.

That I know from experience, November tends to be one of the best high winds month of the year.
At least here in Cozumel that's only 12 miles across from Playa del Carmen.
