My kite wing is the Axis PNG910B which is a crossover wing that I use for downwind wave surfing and love it. It's also a great wing for winging as well. Not sure how much you'd like it for flat water though. Sounds like the Axis Spitfire 840 might fit better for what you want.

There are lots of 1 strut kites that I would consider "normal" kites and outside of powered kiteloops behave the same as 3 or 5 strut kites.
