No idea really but might they not also put these "extra panels" in to create a certain "curving" profile ? And maybe the centre strut doesn't have that curve ?

Is this about where to place the inserts (in the board) ? If it is, I would look at another board of similar dimensions and copy. I don't remember but I also expect they will be in the middle. So, since straps are placed at an angle, LH and RH side would have same distance from centre line. But not ...

Also there isn't much wind in that video. I think if you try edging into the jump with more wind, it will become clear that controlling that edging/pop is difficult. That's where you can improve, without overthinking it or going into the theory too much.
