You're right. Sheeting in just before take off will choke the kite ever so slightly and perhaps slow it down a little. Again, not much, but a little. As soon as you leave the water, sheet in by pulling the bar all the way to the chicken loop to increase power and lift. Once in the air, steer the kit...

Dimitri touches on so etching I think is often overlooked...push off with the back leg. It will easily add some good height and help you square up for the landing.
