Flying speed depends a lot on the setup; a depowered kite may get very jumpy, a powered one is usually slower. I have a 7m Rhino that used to be very scary with my usual bar and line length setup. I added about 10cm to front lines and now the kite is much more controllable and has steadier pull.

You need a kind kite (deep canopy) with tuning possibilities on the the wing tip and a small bar. The new Kahoona has it - you can put it on B setting and it will be slower and the kite is still kind enough and very predictable. I can do my passes even on the 5,5 and I never thought i would have a chance

The setting helps - you can have both a fast and a "slow" kite
But in a small kite even more important is that it´s easy flying...
