Help me understand why you wouldn't leave them on?

only reason to not leave them on is if you have multiple bars with different line length or if you have fewer bars than kites

Because it's faster and easier to just run the lines out and hook them up than it is to try and figure out which line to pull to sort out the inevitable inversion when you leave them hooked up.

1. The bar and all the fittings can be a wear point.
2. Bars are expensive so two bar sizes can cover more than two kite sizes.
3. Having two bars with different line lengths (23M/27M) provides an additional tuning option for a selected kite and wind conditions.
4. Salt water kite flying really requires bars to be rinsed in fresh water and packing a wet bar with the kite is not desirable.

Hell yeah I leave my lines on. I'm too lazy to take the extra 1.3 minutes out of my important time to bother with running lines out.
Hell...just the other day I didn't even land my kite. I parked it at noon and tethered it to a nearby rock so all I need to do is just walk over and grab the bar and kite away. I even started sleeping in my harness and board shorts so I am not bothered by the 4 excruciating seconds it takes to put them on.
Detaching lines? I can't be bothered with that waste of time.

all Flysurfer riders?
But I don't like it...just tried a kite that had the lines on it...it took me 30 min to untangle all !
I prefer to take them off and on again. It is kind of meditation before the session. And quiet fast to set up.
