So, I seemed to have accidentally achieved a one board/kite combo to rule them all!
Well almost.
I have my trustee mutant that can handle any conditions from butter flat shallows to house sized waves.
Add my 8m I can fly that bottom end in mutant mode round 20 knots and hold it through to 40 knots gusts. In fact today the gusts nudges close to 45 knots. (it go pretty silly)
Then enter the hydrofoil. Bolt that to the mutant and I can ride the 8m to as low as 10 knot up to 25 knots with relative comfort.
So my range on with mutant, 8m + hydrofoil is 30 knots. Wohoo.
Currently i'm swapping out bindings to strapless + foot hook. If I can engineer a binding system that works for foiling and stupid powered 30+ boosting I wont even need to change straps.
The mutant works pretty well in the waves, is good at powered boosting and also have enough nose rocker to be work well enough as a foil board. Its like me, Jack of all trades mast or none. For a one board/kite combo its insanely good.

I'm headed in the same direction, but your way ahead of me. Once I learn how to foil, I'll probably make a combo surfboard, and use a 12 m + 7 m single strut kite as my travel kit.

Lol....as of two hours from now I'm kind of in the same situation.
My target wind range is 10/11 to only 30 knots. Rarely gets beyond this unless in a winter storm front which I can't be bothered with to be honest.
So right now all I have is a 10m kite (rebel), a twin tip NHP nobile (15/16 up) and I'm about to pick up a liquid force happy foil ( y wife won't even let me put a shelf up so I can't do what you've done).
The only difference plummet is ...I have no idea how to foilboard yet!! Just a small difference bahahahahaha...
Disclaimer is my 8 yr old boy has a 6m catalyst (same vintage as yours) so I do have access to that if need be.
And the other difference is...I literally have no other kite size. They are all gone. So from 5 kites to one really. It's kind of liberating actually...
See how it goes hey...

that board is a beauty, you may have inspired me to start making my own. Im on the other side of the spectrum with 11 kites, 3 twins, one surfboard, and one foil.

Been down to one kite for a week now...it's kind of liberating...pack the car..normally which kite and baord combinations? Always allowing for at least three potential outcomes, which normally means taking two kites and at least two boards.
Now it's like...kite in car...board in the car (now boards) okay lets go.

Good to know it can be done.
I am in the same quandary -have more inventory, or cut it down drastically and make it work.
I have the F-one convertible, and bought the foil - have to learn foiling!
I bought used Neo's 6 & 8, both packed in one bag.
I have rebels 7, 9, 12 - I want to get rid of, but am I rushing? Keep them till I'm better?
I am hoping the Neo's are enough.
I want to cover a wind range of 10 - 35. Feasible?

Well I still have other kites. But they ain't being used much. Also the hydrofoil cant do all water conditions. So I still need bigger kites for days I can't hydrofoil!....

My plan when the water conditions don't suit is to have fun on the actual happy foil board, it's based around a wave skate type board.
Who knows early days, might get a 12 at some stage for some ocean bashing...we will see.

An alternative is get a kite that folds up into a small package, ie a Cloud. My 5.5, 8.5 and 13.5 will fit into a single standard cabrinha, north or slingshot kite bag. Add a shinn el stubbo and Zeeko foil and I am pretty good from 8/9 knots up to mid 30's. Flat water and Surf.
