How do I add PU cover to my sheeting lines? Where to source the tubing? Is it difficult to do? Thanks

Buy it on ebay. Pull it through with a piece of line. Lubricate with water. You can soften the tube with hot water. It's quite hard to pull through.

It's easy enough to sew PU with a domestic sewing machine if you want to anchor it into place.
It's not strictly necessary to sew it. I have had a couple of DIY repairs and customisations where I've simply relied on friction and the hardware at either end (it doesn't matter if the tube on leader line moves, for depower the shackle on one end and the chicken loop on the other secured the tube).
You need to think through your project and decide for yourself.

You cannot add PU tube to the centre line on a bar not made for PU tube. The hole will be too small. The tube will jam if you try to steer and sheet at the same time. It's tolerable, but not pleasant. You might be able to make it work by using a thinner depower line and thinner tube.

Bought some 6mm OD 4mm ID PU tube on eBay and tried it out today on my DIY bar. Worked like a charm! Glad I won’t be going through my 4mm Amsteel sheeting line so fast. No friction issues so far. Hardly noticed a difference. I have a bunch of extra tubing if anyone wants some.

I use bars with PU tubing (Ozone) and without (Naish).
I prefer the feel without.
Contrary to what some expect about smoother action, the PU tubing can bind and make depowering difficult when turning hard and holding the bar sideways. If you are doing a kiteloop or downloop this can be a problem.
