I like red to port and green to starboard, but as long as there is some kind of color difference, I can probably figure it out.

There are several types of colour blindness, and about 5% of the population is colour blind in some way. For those with colour blindness, BLUE has one of the best colour differentiations with most other colours, including RED.

It’s just a matter of knowing your gear. Red white green yellow or pink it does not mather at all people need to know how their gear works and learn safety disciplines

It does matter among others to those who have two or more different bars, to those switching from an old bar to a new one, and to those learning.
It should be a standard to
always have RED in the left, and a colour with a universal differentiation such as BLUE or BLACK on the right.

NO it does not it does not matter what colour it is your steering wheel of your car does not have that either nor the wheel on a boat all brands have a different color code on their bars and people should learn how to use it and learn to know different gear and YES a instructor should teach them this .
