I couldn't find Kitesurfing Among the many workouts the apple watch offers. Which workout would be the most similar?

The Woo app automatically adds to the workouts, you do not need to select a workout: Just activate the freeride option for the Woo Watch App. Your session will save as a workout in the Apple Fitness App.
Practically, I think it is equivalent to selecting “Other” but it has GPS recording enabled.

+1 for the WOO app. You don't need a WOO for it to work.
But as far as the native Apple apps, the open water swim works best.

Note that if you do long sessions on the water your Apple Watch probably is going to run out of battery.
Mine usually gave up after about 3 hours.
If you want to use the woo app:
I also had some issues with the permissions of the woo app. It seems to lose it every few months resulting in “lost” sessions on the phone app.
For these reason I recently switched to garmin to track my sessions.

Haven't tested the woo app yet, I'm looking forward to it.
But until now I used the swimming workout to track kitesurfing.
The surfing workout doesn't track GPS.
The downside of the swimming workout is that it will often think that you're not swimming and buzz your wrist to ask to stop/pause the activity. But as long as you ignore that, the tracking works just fine.

I use the sailing mode when I kitesurf. It makes me feel some sense of accomplishment when I burn around 800 calories in an hour of foiling. This indeed feels a bit high some sessions, especially if it's more of cruiser session. It's interesting to look back at hear rate and see some spikes when say I'm working hard to get on foil, etc.

But then the watch calculates burned calories as if you were swimming?

I tried using the sailing mode but for some reason it doesn't use the gps to track my route

Two of my friends are now using Waterspeed app and are pretty happy. I used to use Sessions app, yet it kind of fell out of support and behaves funny no being able to download sessions.
So I plan to try Waterspeed too
