Surprised that you got "so many" "buddies" complaining. I hardly know anyone who has issues with their knees kiting. We all occasionally struggle with some niggles, but I do not know of anyone who has more "permanent" knee problems kiting.
Unfortunately I don't live in a place where you can kite 5 days a week - so it might have been different if I did.

Also, somewhat depends on how well you can use your body position and the harness. The more you can hang off the harness and front lines the less you ‘weigh’ and the less stress you will put on your legs, particularly your knees. Especially in choppy conditions. But coming in for landings aren’t all soft and sweet, we all miss the timing a bit and that’s when you pay the price.

My 5 cents: I ski 30+ days a season and play basketball regularly(1-2 times a week) since 35 years. I started kiteboarding 6 years ago and tend to have 40+ days on the water each season on average. I have torn ACL(non reconstructed) since 2016. Out of the 3 sports I practice regularly kiteboarding is by far the easiest one on the knees. And the only one of the 3 I dare practice without a knee-brace. Given I do not jump that high and do not perform unhooked free style tricks.
Also - do not compare to the pros, they are in another league of risk and strain that put on their bodies day after day.

Nah. This idea that the body is something you can "use up" is wrong. Knees aren't getting any better by someone sitting on a couch all day.
It is a question of not overdoing it. How much it takes to overdo something isn't a stupid question and I don't think this is a stupid thread - even if we won't get a "scientific" answer until Trudeau states his opinion.

My knees are still good-ish.
I've tweaked them a few times over the years kiting. However, I've smashed my knees mountain biking to a factor of 100 to 1 kiting knee injury.

I've had some tendinitis in my knees, but mostly from working out, and not from actually kiting. Maybe a little bit of soreness after super choppy days, or big jumping days where I'm landing really hard (I think the pros hurt their knees a lot on the huge airs that I'm not doing).
I've found that as long as I'm doing lower body works outs ranging from deadlifts to goblet squats, split squats, etc then I'm fine. Doing some mobility and stretching also goes a long way in injury prevention.
It also helps to do some foam rolling / trigger ball work if you're doing back to back days of intense kiting to keep all those muscles moving.

No, that hype is 15 years late and not true... Ride an hydrofoil, less resistance and half size kite used.

The first 2-5 years of kiting knees will hurt it's normal. It's the process of adaptation to the kiteboarding exercise. If you're not pushing it like the pros doing extreme megaloops and huge unhooked stuff then there is not much to worry about.
Jogging is worst for the knees in my opinion.
