Hydrofoil board building - dimensions & Layups

I'm getting ready to shape some blanks.
I had to reshape the boards in Akushaper to make them machinable, and the machiners managed to make them, I'll get them soon. Didn't have to use the Divinycell.
My plan is to make a 1350mm board for intermediate riding and rough conditions, and a Pocket board for flat conditions and when I process this coming summer.
I've decided to make them a bit thicker, about 30-40mm to compensate for the fact I'm using standard surfboard blank with 25kg/m3 density.
I'm pretty confident on the size and rocker of the 1350, it's based on my 1450 I have now that I'm happy with, but it's too heavy. it will be 1350 x 470mm with moderate beveled rails on the bottom.
The pocket board is more of question. I was thinking 1200, but see that Ketos and others make them smaller.
I'm 5-8 (175cm), 78-80 kg.
You guys that ride pocket boards, what is your recommendation for length and width?
Also, I have 250mm from plate back edge, and there's plenty or space for my rear foothook and foot. I could mount foil another 70-100 mm back, and shift foothook all the way to the tail. I see some people have the foil almost all the way to the tail. Any negatives with this?
Should I forget the bevels on the bottom rails?
For layup I'm thinking from top down :
4oz glass
6 oz glass
6 oz deck patch
3x 250g uniD cf - 100+150+250 wide to taper edge. Full length
Foam with HD foam insert at plate mount and foothook mounts.
