W671, W740 and W800 and W1000 are all in the same family. There are many good reviews of the W800 for kiting, and even winging. There will be very few reviews of the W740 as it's quite new.... but it'll be 1 step closer to a full race wing.
It comes down to what is most important to you... ease of use, or max speed.... I think the W800 is an excellent balance of speed and ease of use. For "freerace" and "freeride" I would choose W800... but if you're racing in competitions then the smaller W740 and W671 will be marginally faster.

No, it’s a wave surf wing for huge waves and there’ll be even smaller one too

I appreciate grigorib's thread on Sabfoil compatibility of wings and fuselages and stabilizers.
Here is the Sailworks page with their chart with some of this information. Sailworks is a Hood River well respected windsurfing company and is a Sabfoil dealer. Click on the link if the pictures below are not high enough definition.

I got a report that 1100 fuselage (for 900 wing) doesn’t fit regular masts as it has longer connection slot
Also 1250 wing doesn’t come with 8mm->6mm adapter washers and is not intended for use on 710/749 fuselages as it’ll likely snap the 6mm bolts
