To a question Gunnar answered: 679 and 683s are identical. See earlier discussion from beginning of 2020. Since 700-HS fuselage was release the surf wings are made with 8mm mount holes so that’s how newer wings will be different too
683 is completely different wing for discontinued windfoil fuselage
One item to add to Gunnar’s comparison of 633 vs 799 - 633 is probably the most arrowhead, swept back LE wing Moses made and that works amazingly well against seaweed (OBX problem). 799 will collect the seaweed and will lose efficiency and lift fast forcing you to stop and get the seaweed strains off the LE
Around where I kite, most of the weed is in the surface of the water and find that it gets coughs most of the time in the mast, so less of a problem in practice for me (regarding weed for wing shapes)

It would cost Sabfoil nothing to offer 679, 633, 790 ot any other m6 wave wing in the hs m8 option
SABfoil is not a company which listens for feedback and riders’ suggestions
How long have all been asking for 80cm mast and it took forever to make one. How much we’ve been asking to bring back the original 425 stabilizer - not happened. Instead they trolled everyone with some flat joke of enlarged 370. How long folks have been asking to move surf wing closer to the mast to reduce lever pulling mast insert out in the back - and used Stringy’s fuselage instead. Asked for years for larger wing fitting kite fuselage, so there no need to buy and travel with two fuselages - not happening. People ask for tiny <90cm pocket boards - none there.
I’m not bitching, just summarizing frustration from lack of acceptance of riders’ feedback.
But many companies are like that. Bigger ships are slow to steer.

Also, initially 633 and 683s weren’t even meant for kiting and thanks to Gunnar first posting a positive review on 633 kite use and flagging off years of major kiting fun on that wing for hundreds if not thousands of happy riders. Yet practically the 683s/679/633 in kite wings capacity belong on kite fuselage and rarely wings over 1200 sq.cm are useful for kiting. It would make sense to make larger wings for kite fuselage and leave surf fuselage to wingers and SUPers. I don’t see that happening ever - winging is on rise and freeride kitefoiling will probably shrink.

Why so much “material” between mast conection and stablizer?
Why not include an zinc anode insert like Alpinefoils?

As an engineer things like this, easy fixes, bother me when not adressed.
So for your other question about shimming - since you’ve got the 92cm mast your back foot big toe should be in front of mast plate rear bolts to ride it without shimming
