Has anyone tried the 607 Wing yet? According their website its for high speed/ high winds.
I'm wondering how it compares to the 671/670 and 637 in terms of max speed and boosting.
The 637 and 671 are for Racing, which may be a compromise since they factor in upwind/ downwind angles which I don't care about since I'm not competing
I'm wondering if the 607 is the magic wing for a Fast, stable wing?
Why is this catered for high winds only?

607 wing is 440 sq.cm only compared to ~560 of race wings so it’s not for everyone. I’m sure lightweight riders might enjoy it

Yes it sounds like a rocket for us average weight humans, I guess that's why they're suggesting it for high wind

I weigh 84kg, I can only say for 790 to 633 for kiting. I only kite with single skins or equivalent. With the 790 I can jibe and go toe-side with less wind (with the 633, there is a point where the wind is too low that I have to jibe to heel-side before I loose speed). With more wind (enough that I can ride toe-side fine), the 633 is easier and more forgiving to turn.
I am also curious of the W799 and W899 for kiting

High wind is very good with the 790 because I can use a very small kite, just going downwind (dead downwind) with a lot of wind, gets a bit tricky because it gets to a point that the wind speed is already a lot even if you can subtract the apparent wind speed of the?? 20 knots? that you are foiling (and the large waves challenge your skills). Low speed...? very low

W799 vs W633

I currently ride the 799 for kiting and have ridden the 633 and other Moses wings for many years. The 799 is a significant step forward, it is relatively fast for its size, turns well while still having good stability on all axis. The choice of stabiliser will impact its characteristics big time, use the small 399 stab and its "skaty", with a bigger stabiliser like the 483, it becomes even more stable. The 450 makes it VERY stable but it becomes draggy and slow.
Overall, the 799 is now my go-to wing for 90% of the kiting days. Only in very light winds I use the 790, which is a different kind of wing, much slower due to larger surface area (1500cm) and thickness but slightly better low end.
