The biggest issue for me is feel. Must be a completely flat sole on a non padded deck to get any decent connection to the foil. Just looking at those Keens gives me the willies.

Did foil for a long time way back with flat bottomed tennis shoes.
Was often in a rocky, prickly, weed invested place with a land spit in between so one could ride off and on shore.
So shoes worked well to cross and felt enough contact control on my foil board.
Now starting to have and old ball of foot injury reappering so considering shoes just for added padding.

Another plus of booties in cold winter foiling is that the upper seal bootie gasket can be stretched over the ankle gasket of your drysuit. This stops the potential for water jetting up under the drysuit gasket it bad crashes.

Neoprene Vibram 5 fingers if the launch is sketch. They don't do a lot for warmth but they are almost like riding barefoot.

A couple times I have worn some really cheap neoprene socks with grippy dots on the bottom. Lots of variations of these online. While they do make the deck of my SS DC (2015, strapless) more slippery, the overall riding experience is better because it is softer. Foot switches feel soft, scooting the feet into position is a bit easier, and much less fatigue on the feet for the session. Going barefoot I've had my feet get somewhat tired/numb after an hour or two.
The slipperiness just forces me to precisely place my feet. Can't be sloppy.
