On my natural side, going from heelside to toeside, I'm getting around the lines without much drama and can stay on the foil during 180s or 360s with some consistency. Hasn't quite clicked yet on my unnatural side..

I'm finding I need to slow down a lot during the carve, and the radius of my curves ends up being very small, almost pivoting in some instances, which is relatively easy to do on the Moses 633.

Is a faster / higher aspect foil "better" for 180s/360s to get a larger radius and keep momentum?

That makes sense, but you can do a more drawn out turn on your foil. Your probably tightening the carve to maintain line tension. You need more wind, and just keep doing them. Smaller kites help too. Once you have enough juice in a small enough kite, you can send yourself through a wider turn and just drift the kite across the top.

I am not an expret in 360's but i am in the phase where i all close them, with 3/4 still foiling up. Most of fails in light winds ... Some 180 success, i started recently. Just to illustrate whrre i am..

I noticed that when i forced myself to keep both hands on the bar and look at my direction from below my front elbow, the move had more succes rate. For 360 and 180... so look below your elbow...
