While difficult relaunches sometimes it's better to sit on the board. On a pocketboard (micro, Moses onda) it always flips back to side, the mast wants to come to the surface. Am I too stupid? Any Tricks? Or is it just normal on a pocketboard?

You are quite right.
Just point the board downwind a lot, or full downwind.
Your feet and body in the water (and some of the board/foil) works as an anchor just fine, so this way you can relaunch without your board tipping over
Works for me, I never have my board sideways to the wind, if relaunching or winding lines up.

So the nose of the board looks out of the water and I lean back into the water OR should the board be flat under the surface?

Not that important, do where you personally has the best balance.
I point the nose a tad up, to get even more resistance.

I found it tricky at first so practiced sitting on the board without the kite, it helped a lot. Was super easy on my large volume board with sword. My pocket board with small wings is easy but sits deeper. When I use the large bouyant wing it does try to flip on its side but once astride it, it settles down. Definitely the best way for self rescue or tricky relaunch.
