No anchor, just lay it on its back, bit of sand to hold it down. Run the lines over the kite, not around the tip. Pull on the soon to be upper front line, stand the kite up and your away.
Landing is the reverse, drop onto tip, pull lower front line, kite falls on its back, job done.

Have you tried drift launching this way? I have to drift launch fairly often by letting kite drift away from me until lines get taught. The ufo tends to lift off of the water and do a roll if the wind is above 17 mph or so.
