I 've been trying to translate the sailing jargon too. I think (likely to be wrong) it is talking about angle of the craft to the wind and its speed.

High Mode - High and slow, Low mode - low and fast is as far as I've managed to translate so far. After that it always references sail set ups...
Any sailors/racers that can help out?

I’ve loved watching these, the commentary cracks me up. Would love to see more close ups of the riding so we can see what they are doing, you get some when they turn around the buoys , but I’d love more!

Yes, "high mode" versus "low mode' indicates sailing a higher angle at lower speed (upwind, the opposite downwind). For example, if you're headed upwind to a mark, and you're just barely able to make the mark you might sail a "high mode" that is slightly slower to avoid having to do two more tacks to get around the mark.

In a downwind "high mode" you are going for full on speed even though you won't be sailing as straight toward the bottom mark. You may do this to avoid traffic, get across to the other side of the course where the wind is stronger, etc.

"Low mode" is the opposite in both directions. Upwind, sailing low has faster boat speed but worse angles, and downwind low mode has better angles but worse speeds.

"High" and "low" just mean "angle close to straight upwind" and "angle close to straight downwind" in this context.
