The 633/483 is used soooo often, there can Not be anything wrong.
I struggled in the beginning. But the Foil did not fit to me.
After Somebody tried it, I knew that it was not only my fault.
Give yourself more time!
The 633/483 was indeed fine - I was having good progression. But as I noted in my original post, the only reason I changed it was because the floating setup made it a pain to body drag back to the board, especially with chop crashing into my face. If I was in flat water without onshore waves pushing me, I would've continued with the 633/483.

So the wind filled in at about 3:30 pm and so I was able to have a third session on the 799 late yesterday. It gets a little better each time. Starting to figure out my right side water starts. Still tough for me to remain balanced for an extended time but I think that's just because it's my weaker side. Starting to get relatively easy to go to my left. With each start I get closer to finding the right stance. It's hard to describe but you know the moment the kite starts pulling you up. It just feels like you're pushing down on a solid platform with no hinging at your feet. My final waterstart was my best yet. I had a good water start but then started decelerating before I could get up onto foil. So I gave it a quick little pump (my first ever), and IT WORKED! I popped up, leveled off and away I went. Had a nice comfortable controlled ride slowly going up and down. It was steady enough that I even did a couple of small carves - also my first ones. When I finally hit the shallows and jumped off the board, I was feeling pretty pleased with myself so I decided to quit while I was ahead. Plus I only had 20 minutes of sun left.
Was worried the 380 would be too squirrelly for me as a beginner, but that hasn't been the case. It is as stable as SABFoil claims and I like that it seems to give me less lift than the 430 and 483. Though to be fair, I've also moved the mast back and moved my stance forward.
Now my goal is to get comfortable going to my right so I can head out into deeper waters and have more time to ride to my left. And then start going upwind so I don't have to keep doing my walks of shame. So far unlike what appears to be the case for most beginners, I haven't had any difficulty going downwind.

It’ll come in no time. Instead of walking bring kite high and depower a lot to ride downwind
