So basically bar in to increase speed of turn, as you past zenith and you start the jump, sheet out. Time it so you are fully sheeted in at top of jump. Then as you start down, sheet out a little while you are directing the kite as necessary and right before touch down, sheet in again to smooth the landing.
Kinda hard to describe. Takes practice to get the timing right.
With the amount of depower you get, you should have no problem riding over powered. Miss my 15 in overpowered conditions, was a blast.

But from what I see:
Steer up continuesly till about 11:00. bar scheeted in just so much that you keep the Edge.
From 11 till Zenith steer hard, sheet out, carve hard upwind (Loaded pre Hop).
Moment of Take of: sheet in Hard.
So basically opposite of what Adventure Logs explains.
(Personally I would Trust him more than me, as he has got Foilkites.)
