just do a nice roll-up and chuck it on the board, here is a good example from my wife with a 15m race kite:
There is a little bit to learn from that video: This is not meant to blame you, just constructive feeback
You stopped winding at the end of lines. Fixed them. Losing tension because of that. After some fiddling you started to wind up again, while lines were already without tension. You missed one bridle line because of this and it caused problems later. After winding the rest of bridles you did not fix them to the bar. You were moving around within range of the bridle lines, which can be dangerous. And bridles did fall of the bar and got more tangled/messed up than needed. If you get bridle lines on feet/legs it can be difficult to free them.
In my opinion, you should wind up lines AND bridles as far as possible in one go, never losing line tension while winding, and only after that fix the lines to the bar, very well! ANd only after fixing the lines you should unhook and put bar on top of kite (see below). If you do it like this you will have the bar very close to tips with less loose bridles in the water and a lot less mess and danger from bridle lines.
After opening the zipper, you should have went back to the tip the way you came, not around back of kite. In the back of kite are bridles in the water, it's safer to go back around the Leading edge. It is very good you moved the kite in Front of you while sitting on board for the biggest part, it's easier than swimming all the way.
When rolling the kite, fold in top tip ~30 cm, fold both tips again ~30cm - with all bridles between the tips. Put the bar on top after that, position the bar at the very front of kite, sticking out, and the QR even further out. I unhook after this and open zippers is the next step. The bar will still get buried in the roll later, but by this you can unroll without any tangles later. Just unroll on the beach until the QR gets visible and pull out the QR/bar away, to the back of kite and you will be able to just unroll the kite without any tangles.
