In skateboard terms that way looks a bit mongo to me. I think having the board on the other side and mounting like a skateboard from the toeside looks better and keeps more line tension. Probably just aim to get the front foot in putting back foot in on the ride. Maybe get a skim to practice on before trying with straps.
What's the point compared to a normal beachstart? Except it looks stupid to run around in shallow water....
Board on the water - front foot in the strap, dive the kite, as soon as it pulls lean back put the backfoot in and ride. No need torun around

i think that the version from Dimitri looks way better.
normaly when i do a start like this i don´t aim for the straps, i just put my feet behind the straps and put them in while riding.

The point is (like any other kiteboard trick), it adds style. Same reason some riders do board-offs instead of just plain old boosting. Or a back-roll kite-loop transition instead of a plain old slide transition. Style.
But I agree with you that the OP's video (which is a tutorial) shows starts that lack style and interest, probably because he's illustrating how best to learn the start without injury (i.e., by running in shallow water, the chance of injury is less than running from the beach). As usual, Dimitri better illustrates how it's done with style.
