The big deal with wingfoil is getting up and going so a 6m can be essential in light wind. Once flying in light wind, wing size becomes less important.
At 66kg I need about 12k with a 4.2m/1500 high aspest wing/75l board to get flying and can hold it till 20k comfortably maybe more, but the 2.8m gets me going easily with just 18k so just 6k more. Not sure why , maybe it is easier to pump because lighter?
