General sizeing for beginner 100kg/225lbs?

What is the general sizeing advice for a heavy beginner now after the producers have refined their products in 3 iterations? I have bakgrund from both windsurfing and kiting but no foiling on either. 100kg / 225 lbs. Would appreciate some feedback on my own research before i hit the purchase check-out button, please. Location: weak cold winds and brackish cold choppy water

Wing: 7 sqm, not convenient for handling but necessary for 100 kg in our typical winds at 8-12 kts (can get good price on Duotone SLS 2021)
Foil: +2000 sqcm medium/low AR (North Sonar 2200 or eqv. SS Infinity 99? Reptile? Quantum 100?)
Mast: ~70cm
Board: 130-140 liters but design philosophies differ here between 180 cm up to 215 cm lengths on same volumes. After I have learnt I will still always need to schlogg out 300m to catch the wind. Fanatic Sky Wing 6'3'' 140l?

I'm very grateful for any input on this before I commit to 3000 EUR/USD. No demos available.

I weigh 175 so I cannot advise you about what works at your weight but I have both the slingshot foils you mention. I would go with the Infinity 99 over the Quantum 100 for you. I like both but I use the 99 when the wind is really light as it starts earlier and will stay up at a slower speed. Of course it is slower but still fun and is much easier to fly through a gibe. Your choice of board sounds good especially since you schlogg for a distance.
