I've been flying on and off since June for work and the prices have been all over the place like the OP mentioned. Detroit to Denver as high as $950 and as low as $350... Typically they are $400 give or take $50.
Delta has a cancellation policy, but I don't believe you get your money back you just get to re-book. Either way I wasn't to worried about it as long as I could re-schedule my flight. So I decided to book for a trip with my family to the Bahamas for next February. Typically the flights from Detroit to Georgetown are $1,200 + and I booked at about $900. I figured worse case I re-schedule for Feb 2022 and I get to hold the cheap rate.

There was a case of covid-19 reinfection with a new covid-19 strain recently. Probably takes particular combination of attention to detail on both first and second infections for the medical people to pick it up. No idea whether the second time was better or worse. World uptake of the virus is still pretty low, total cases is currently showing at 3,124/1,000,000 of world population so we have months and months of spreading of each strain to go yet. As people go harder on lockdowns it delays tourism longer and longer. Don't bet on your airline still being in business in a year.

Here in Canada there is a mandatory 14 days isolation if you leave the country and return. That's no fun I'm waiting for that to be lifted. I have been doing 3 kite trips a year for over 10 years but this year is not looking good!
