Where you live doesn't count Toby 
Brazil and South-Africa are by far the best ones for me so far. But I have enjoyed most places I have been to kiting. Cabarete, Sardinia, Zanzibar etc. have been great. Tarifa is my only small disappointment. Lovely place, but I might have gotten a bit unlucky with ridiculously gusty winds. When it was only "normal gust" it was a nice place to kite though. Even if it was choppy in a slightly boring way.
Indonesia and Madagascar certainly on the list for the future. Also Denmark.

Egypt
If you live in Europe it is a great destination. Predictable winds, flat water standing lagoons that go on for kilometers, good climate, very short flight, great package deals. But not waves though but I like it flat. Many good places but just to give an example, go to El Gouna and ride at Makani Beach Club. Windy and flat.
