Having scuba dived for a bunch of years with drysuits, a two piece light fleece worked well for me.

Same here I have been drysuits for 10 years I just use the same 2 peice fleece underwear that I use for skiing when it's crazy cold I ad a fleece vest on top. So far I see no reasons to change I have been riding with snow falling and ice building up on my lines.

I wear hot chilies polyester fleece, if its real cold a second layer of fleece sweat pants and top.......Number one rule, no cotton. You will always get a little water in a Drysuit but with fleece you will not feel it.

Once you use Helly Hansen's LIFA base layers, you'll understand why they're one of the leading manufactures of technical base layers for the sailing industry.
https://www.hellyhansen.com/baselayer/
I personally use the LIFA Active top & bottom, but I sometimes put on a lightweight stretch-fleece top and leggings in combo with the base layers on really cold days. The LIFA Merino is awesome, but it tends to get damp when kiting and causes me a chill sometimes. The 100% LIFA is polypropylene and stays the driest and warmest of any synthetic material. It's nothing like 20th century polypropylene... it's now soft and buttery. I do encourage those to avoid 100% polyester or 100% merino wool since they hold moisture and thus are more prone to causing chilling. However YMMV
FWIW: I was a mfg rep for many years and worked for several high-end technical base layer companies. I've literally tried them all, and I'm convinced the HH LIFA is the best you can get.

I really like the Ocean rodeo zip free fleece - though I don't have a lot of things to compare it with. It wicks sweat so well. I have tried it with wicking garments underneath but found they don't wick well enough so I have to layer on top when it gets cold (though I find I'm good down to about 7c without any extra layers)
Only downsides from my use:
The arms are a bit long for me so I need to roll them back up otherwise they impinge on the arm seals
The neck entry system is a little uncomfortable to start with (like wearing a collar and tie)
