I should have mentioned my setup as well, I guess. I am using a T40 which has no track so I can't move the mast back.
I am riding strapless from day 1 so it is easy for me to move around.
What I find on the 633 is that with increasing speed the front foot pressure increases. I wonder if the Moses guys did that on purpose as this setup was originally built for slow speed and pumping. I guess a shim would help which I might try.
What Peter suggested that the smaller wing makes the foil more lifely is also what I am hoping for.
Again, my original question still stands if anyone rode the 633 with the 330 or the 325 stab.

If the 330 and 325 are smaller stabs, you can ride these and get exactly what you seek, more liveliness and still okay stability
I dont know any of these, but noone need to have ridden these, I can tell you 100 % they WILL work - it is not rocket science in design, the stabs.
If they somehow feels "not perfect" in trim, it will only be a matter of shimming the stab slightly - but I doubt this will be necessary.
I would just go with the smallest one if I were you Rolf
I have ridden loads of different stab sizes and types, and both flat and curved, and some that arent matched from the manufacturer - they are different indeed, but they all work
