I'm 66 and have the same problem, delayed onset muscle soreness, along with arthritis. What has helped me is:

1) high protein supplements to help with recovery, such as Muscle Milk, Boost, etc.
2) 200mg ibuprofen taken with a meal, no more than 400mg total each day. I try to avoid taking ibuprofen if the soreness/pain is not that bad.
3) exercising regularly if there is no wind.

Just sitting around the next day or two just makes me suffer longer.

If you keep moving, they can't bury you.

Wear an impact vest under your harness. Cross Train more. Check out Foundation Training by Dr. Eric Goodman. Standup Paddle Surfing is great exercise for the core muscles, and complements kitesurfing perfectly (no more getting skunked).
